July – Farmer’s Market Salad

Farmer’s Market Salad


1 ear corn on the cob (cooked and kernels cut off)

1 medium tomato (cubed)

1 small cucumber (cubed)

1/2 red bell pepper (cubed)

1 chicken breast (grilled)

1/8 head of red or green cabbage (sliced thinly)

1/4 c. Kalamata olives

4 T. Odelay Extra Virgin Olive Oil

1/2 lemon (juiced)

Kosher salt



Combine all ingredients through olives. Sprinkle salt on salad and toss. Drizzle with Odelay Extra Virgin Olive Oil and toss. Squeeze on juice fromĀ 1/2 lemon and toss. Add freshly ground black pepper.


Serves 2.
